Mutton Rogan Josh

We were bored of having the same old mutton curry and mutton biryani all the time, as I knew just those recipes of lamb. So I set about searching for that different dish for tonight’s dinner. And Rogan Josh it was, a khazana of spices which cook for a long time infusing themselves into the meat making it so tender and delicious. 🙂

Mutton – 1/2 Lb

Cloves – 2
Cinnamon Sticks – 1
Bay leaves – 2
Peppercorns – 5

Chopped Onions – 1/2 cup
chopped Tomatoes – 1/4 cup

Ginger garlic paste – 3 Tbsp
Fresh coconut paste – 2 Tbsp

Mint leaves – 5-6
Chopped Coriander leaves – 1/4 cup
Slit Green Chillies – 2

Red Chilli powder – 2-3 Tbsp
Coriander powder – 1 Tsp
Garam Masala powder – 1 Tsp
Turmeric powder – 1/4 Tsp
Salt – 1-2 Tsp

Curd – 2 Tbsp
Oil – 2 Tbsp
Butter – 1 Tbsp
Almonds – 2
Sugar – 1/4 Tsp

Wash the meat well and marinate it with curd, a spoonful of chilli powder and ginger garlic paste for an hour, leave it in the fridge.

Heat oil in a pan. Add cloves, cinnamon, bay leaves and peppercorns. Fry for a minute and add chopped onions and cook till the color changes. Now add the remaining ginger garlic paste and fry well till the raw smell leaves. Then add the coconut paste and the tomatoes. Cook for two minutes and add the slit chillies, mint and coriander leaves.

Add the marinated meat to this and cook for 5 minutes. Now add the red chilli powder, turmeric powder, coriander powder, garam masala powder and sugar. Mix well and add one or two cups of water. Let it boil on high flame and then cover it and let it cook on low to medium flame for atleast 45-60 minutes.

Add a dollop of butter on top. Check the consistency you need and cook accordingly once the meat is well cooked and blended with the spices. It is basically supposed to be rich in gravy and color. Garnish with coriander leaves and sliced almonds.
