Yummly Rabdi

I had all the ingredients needed for an Indian dessert, but wanted to try something new, Google chacha helped me find the perfect recipe. I don’t like sweets much but my husband adores them, so I was looking for a fairly quick and easy recipe and this is simple yet heavenly in taste.

Milk – 3 cups
Sugar – 1/2 cup
Green Cardamoms – 3

Bread crumbs (I used brown) – 2 Tbsp

Sliced almonds – 5
Chopped Cashews – 2
Chopped Raisins – 3

Toast a slice of bread till crisp and blend it into a dry powder for bread crumbs.

Boil the milk, then add the sugar and smashed cardamoms. Cook this on low to medium flame for atleast 30-40 minutes till it is reduced to 1/3rd amount. Keep moving the malai that forms on the surface from the edges to the center of the vessel by stirring occasionally. Then add the bread crumbs and mix well.

Let it cool once done, garnish with almonds, cashews and raisins. Freeze for atleast an hour and serve chilled.

This would be in a creamy color, but if you need a rich yellow color, you can add few strands of kesar to it. You can also use pistachios and vark leaves for garnishing, which will make it a ‘Shahi Rabdi’.

I was fasting today and made this without tasting but when we had it later in the night for dessert, we had a spoonful and stared back at each other surprised at how it tasted so good. We stored some for tomorrow with so much difficulty. 😛
